Freeze Your Bread
Trust me. Freeze your bread. It won’t hurt it. Not even a little.
What we do at home is slice the bread, store some in a bread bag (such a good investment!) on the counter, and freeze the other slices, and use them as needed. If you want to make absolute sure that they don't stick together, put a little piece of wax or parchment paper between the slices, but this really isn’t necessary most of the time.
If your bread becomes stale on the counter after a few days, cut it into cubes, toss it with olive oil, minced garlic, garlic powder, Italian herbs, and salt, and toast them in your oven to make croutons. Sour dough croutons are truly awesome.
For other baked goods, freeze them and when you’re ready to eat them, counter-thaw and then warm up, covered if possible, in your oven for a few short minutes. This will bring them right back to life.
Do NOT refrigerate baked goods. This will dry them out and make them much harder to revive.
None of my products are made with any preservative of any kind, so the shelf-life is much more limited than store-bought breads. Store accordingly!
